01 - 1 sheet puff pastry, thawed
02 - 1 cup fresh spinach, chopped and sautéed
03 - 1 egg, beaten
04 - 1 tablespoon olive oil
05 - 1 garlic clove, minced
06 - Salt and black pepper to taste
07 - 1 teaspoon dried oregano or dill (optional)
08 - Flour for dusting the work surface

# How to Make It:

01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - In a skillet over medium heat, warm the olive oil, sauté the minced garlic for about 30 seconds, then add the chopped spinach and cook until wilted. Season with salt, black pepper, and herbs if using. Remove from heat and let cool slightly.
03 - On a lightly floured surface, roll out the puff pastry into a rectangle approximately 10 inches by 12 inches.
04 - Spread the spinach mixture evenly over half of the pastry. Sprinkle crumbled feta over the spinach layer. Fold the pastry over to cover the filling and gently press to seal. Lightly flatten with a rolling pin.
