# What You Need:

01 - 1 lb baby potatoes, halved

02 - 8 oz block feta cheese, crumbled

→ Herbs & Spices

03 - 4 cloves fresh garlic, whole
04 - 1 tsp salt
05 - 1/2 tsp black pepper
06 - 1 tsp paprika
07 - 2 tsp fresh thyme or oregano

→ Oils & Fats

08 - 3 tbsp extra virgin olive oil

# How to Make It:

01 - Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - Toss the halved baby potatoes with olive oil, salt, black pepper, paprika, and thyme until evenly coated.
03 - Spread the seasoned potatoes in a single layer on the prepared baking sheet. Nestle the crumbled feta and whole garlic cloves among the potatoes.
04 - Roast for 30 to 45 minutes, tossing halfway through, until potatoes are golden brown and crispy.
05 - Serve warm, drizzling with any remaining olive oil.
