# What You Need:

→ Cookie Dough

01 - 1/2 cup plus 2 tablespoons unsalted butter, at room temperature
02 - 1/4 cup caster sugar
03 - 1 teaspoon vanilla extract
04 - 1 1/2 cups all-purpose flour
05 - 1/4 teaspoon fine salt

→ Icing

06 - 1 cup confectioners’ sugar
07 - 2 tablespoons strawberry puree, from 2 large strawberries hulled and mashed
08 - 1 teaspoon unsalted butter, melted
09 - 2 tablespoons milk

→ Filling

10 - 2/3 cup strawberry jam

# How to Make It:

01 - In a mixing bowl, cream unsalted butter and caster sugar until light and fluffy. Add vanilla extract and mix until combined.
02 - In a separate bowl, whisk together all-purpose flour and fine salt. Gradually add to the butter mixture and mix until a soft dough forms.
03 - Roll the dough to 1/4-inch thickness on a lightly floured surface. Using a heart-shaped cookie cutter, cut out cookies and place on a parchment-lined baking sheet.
04 - Chill the cookies in the refrigerator for 10 minutes. Preheat oven to 350°F (175°C). Bake for 12–14 minutes, or until edges are lightly golden. Cool completely on a wire rack.
05 - In a bowl, whisk together confectioners’ sugar, strawberry puree, melted butter, and milk until smooth.
06 - Spread a layer of strawberry jam on half of the cookies. Top with remaining cookies to form sandwiches. Drizzle or pipe strawberry icing over the top.
07 - Allow icing to set at room temperature before serving.
