In a mixing bowl, cream unsalted butter and caster sugar until light and fluffy. Add vanilla extract and mix until combined.

In a separate bowl, whisk together all-purpose flour and fine salt. Gradually add to the butter mixture and mix until a soft dough forms.

Roll the dough to 1/4-inch thickness on a lightly floured surface. Using a heart-shaped cookie cutter, cut out cookies and place on a parchment-lined baking sheet.

Chill the cookies in the refrigerator for 10 minutes. Preheat oven to 350°F (175°C). Bake for 12–14 minutes, or until edges are lightly golden. Cool completely on a wire rack.

In a bowl, whisk together confectioners’ sugar, strawberry puree, melted butter, and milk until smooth.

Spread a layer of strawberry jam on half of the cookies. Top with remaining cookies to form sandwiches. Drizzle or pipe strawberry icing over the top.

Allow icing to set at room temperature before serving.
