# What You Need:

→ Cheesecake Batter

01 - 16 ounces cream cheese, softened
02 - 1/2 cup granulated sugar
03 - 2 large eggs
04 - 1 teaspoon pure vanilla extract
05 - Neon green food coloring, as needed

→ Oreo Cookie Crust

06 - 1 cup Oreo cookie crumbs (approximately 10 to 11 whole Oreos)
07 - 2 1/2 tablespoons unsalted butter, melted

→ Topping (optional)

08 - Whipped cream, for garnish
09 - Sprinkles, for garnish

# How to Make It:

01 - Preheat oven to 350°F (175°C) and line a standard muffin pan with paper cupcake liners.
02 - Process Oreo cookies in a food processor until fine crumbs form. Add melted butter and pulse until fully combined.
03 - Evenly distribute the cookie crust mixture among the paper liners and press down firmly to create a compact base.
04 - In a medium bowl, beat the softened cream cheese with sugar until creamy and smooth. Add eggs one at a time, followed by vanilla extract, mixing just until incorporated.
05 - Blend in neon green food coloring until the color reaches a vibrant Grinch green.
06 - Spoon approximately 1/4 cup of the cheesecake batter into each prepared muffin liner, distributing evenly.
07 - Bake in the preheated oven for 15 to 17 minutes, or until the centers are slightly jiggly but the edges appear set.
08 - Remove from oven and let cool completely in the pan. Transfer cheesecakes to the refrigerator and chill until fully set and firm.
09 - Top each mini cheesecake with whipped cream and sprinkles before serving if desired.

# Extra Tips:

01 - For a neater crust, use a flat-bottomed glass to press down the cookie crumbs in each liner.
