Easy Tuna Patties (Paleo) (Print Version)

# Ingredients:

01 - 2 5-oz canned wild tuna, drained
02 - 1 egg
03 - 1/2 cup almond flour
04 - 1/4 cup chopped green onions
05 - 2 tbsp mayonnaise
06 - 2 tsp dijon mustard
07 - 1 tsp hot sauce
08 - Zest and juice of 1/2 lemon
09 - Salt and pepper, to taste
10 - 2-3 tbsp coconut oil (or your favorite cooking oil)

# Instructions:

01 - In a big bowl, combine all ingredients except coconut oil. Use your hands or a spoon to combine and mix evenly.
02 - Shape the mixture into 4 patties, each about 1 inch thick.
03 - Heat coconut oil in a skillet over medium-high heat. Gently lay the patties into the pan, and cook until browned, about 3-4 minutes on each side.
04 - Serve warm, and enjoy!

# Notes:

01 - To make this kid-friendly, you can reduce the amount of hot sauce and serve with ketchup.
02 - These tuna patties can be served on their own, in gluten-free bread, or on greens with paleo mayonnaise and hot pepper flakes.
03 - To store, keep the patties in an airtight container for up to 3-4 days in the refrigerator or freeze them for up to 2 months.
