06 - 1/4 teaspoon freshly ground black pepper
07 - 1/4 teaspoon red pepper flakes, optional
08 - 1/2 teaspoon sea salt, or to taste
09 - 2 teaspoons olive oil, for spraying
10 - 1 tablespoon fresh lemon juice
11 - 1 teaspoon fresh dill, chopped

→ For Serving

12 - 1/2 cup plain Greek yogurt

# How to Make It:

01 - In a large bowl, combine fresh baby spinach, crumbled feta, softened cream cheese, minced garlic, freshly ground black pepper, sea salt, red pepper flakes if using, fresh lemon juice, and chopped dill. Stir until the mixture is smooth and evenly blended.
02 - Place one egg roll wrapper on a clean, dry surface. Spoon approximately 2 to 3 tablespoons of the spinach filling diagonally across the center. Fold in the sides and roll tightly, sealing the edge with a bit of water. Repeat with remaining wrappers and filling.
03 - Lightly spray or brush each egg roll with olive oil to ensure even browning.
04 - Preheat the air fryer to 375°F. Arrange egg rolls in a single layer in the basket, ensuring space between each. Cook for 12 to 14 minutes, turning halfway through, until wrappers are crisp and golden brown.
05 - Transfer hot egg rolls to a plate and allow them to cool slightly. Serve immediately with plain Greek yogurt for dipping.

# Extra Tips:

01 - Filling can be prepared up to 24 hours ahead and the assembled egg rolls may be frozen for up to 3 months before cooking.
02 - The egg rolls can be customized with additional herbs or vegetables to suit personal preferences.
03 - For best texture, avoid overstuffing the wrappers.
