Carefully twist and separate each Oreo into two halves. Place one lollipop stick in the center of one half.

Place a small amount of melted candy melts in the center of the Oreo where the lollipop stick is set. Sandwich the other half back on, gently pressing to seal. Cool assembled cookies until the filling is firm, chilling in the freezer to expedite if necessary.

Melt red candy melts in a microwave-safe cup, heating in 20-second bursts and stirring until smooth. Dip each prepared Oreo pop into the melted candy to coat evenly. Gently tap off any excess.

Place coated Oreo pops on parchment paper. While the coating is still wet, decorate generously with sprinkles. Allow to set fully at room temperature.
