01 -
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
02 -
Combine softened butter, granulated sugar, and brown sugar in a mixing bowl. Beat on medium speed for approximately 3 minutes, until the mixture is light and fluffy.
03 -
Add the egg yolk and vanilla extract to the creamed mixture. Continue mixing until smooth and well incorporated.
04 -
Add flour, Dutch-processed cocoa powder, baking soda, and salt to the bowl. Mix on low speed just until the dough comes together. Avoid overmixing.
05 -
Using a small cookie scoop, portion the dough into 14 evenly sized balls. Roll each ball between your palms for a uniform shape, then roll one side in Valentine's Day sprinkles.
06 -
Place each coated dough ball sprinkle-side up onto the prepared baking sheet, spacing them evenly.
07 -
Transfer the baking sheet to the preheated oven and bake for 10 minutes, or until the cookies have set around the edges.
08 -
Remove the baking sheet from the oven. Let the cookies cool for 5 minutes on the sheet, then transfer to a wire rack to cool completely prior to serving.
