# What You Need:

→ Cookie Dough

01 - 1 cup unsalted butter, softened
02 - 1 cup granulated sugar
03 - 1 cup brown sugar, packed
04 - 2 large eggs
05 - 2 teaspoons vanilla extract
06 - 2½ cups all-purpose flour
07 - ½ teaspoon salt
08 - ½ cup unsweetened cocoa powder
09 - 1 teaspoon baking soda
10 - ½ teaspoon espresso powder (optional)

→ Ganache & Decor

11 - ¾ cup dark or white chocolate chips, finely chopped
12 - ½ cup heavy cream
13 - 1 tablespoon butter (optional)
14 - 2–3 teaspoons freeze-dried raspberry powder or pink food coloring
15 - Freeze-dried raspberries, for garnish
16 - Chocolate squares, for garnish
17 - Melted white chocolate, for drizzling

# How to Make It:

01 - In a large mixing bowl, cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then blend in vanilla extract.
02 - In a separate bowl, whisk together all-purpose flour, salt, unsweetened cocoa powder, baking soda, and espresso powder if using.
03 - Gradually add the dry ingredients to the creamed mixture and stir until just combined. Fold in chocolate chips and freeze-dried raspberry powder or food coloring if desired.
04 - Preheat oven to 350°F. Line baking sheets with parchment paper. Scoop dough into 2-inch balls and arrange spaced apart. Flatten gently and bake for 10–12 minutes, until just set.
05 - Transfer cookies to a wire rack and let cool completely before decorating.
06 - In a small saucepan, heat heavy cream until steaming. Pour over finely chopped chocolate chips in a heatproof bowl. Let stand for 2 minutes, then stir until smooth. Incorporate butter for a silkier texture if desired.
07 - Spread or pipe ganache onto one cookie and sandwich with a second. Top or drizzle with melted white chocolate, garnish with chocolate squares and freeze-dried raspberries as desired.
