01 - 2 large boneless, skinless chicken breasts, cooked and shredded
02 - 1 cup cooked white or brown rice
03 - 1/2 cup diced pineapple, fresh or canned and drained
04 - 1/4 cup teriyaki sauce
05 - 1 tablespoon olive oil
06 - 2 cloves garlic, minced
07 - 1 teaspoon ground ginger
08 - 1/2 teaspoon red pepper flakes, optional
09 - Salt and black pepper to taste

10 - 4 large bell peppers, any color, tops cut off and seeds removed

# How to Make It:

01 - Preheat the oven to 375°F. Cut the tops off the bell peppers and remove any seeds or membranes. For a softer texture, lightly blanch the peppers in boiling water for 5 to 6 minutes, then transfer to a baking dish.
02 - In a skillet, heat 1 tablespoon olive oil over medium heat. Sauté the minced garlic for 1 to 2 minutes until fragrant. Add the shredded chicken, teriyaki sauce, diced pineapple, ground ginger, red pepper flakes (if using), salt, and black pepper. Cook, stirring occasionally, for 5 to 6 minutes. Stir in the cooked rice and combine thoroughly.
03 - Fill each prepared pepper with the chicken and rice mixture, gently pressing down to compact the filling. Arrange the stuffed peppers upright in the baking dish and drizzle the tops evenly with 1 tablespoon olive oil.
04 - Cover the baking dish with aluminum foil and bake in the preheated oven for 25 to 30 minutes. For a crispier top, remove the foil for the final 5 minutes of baking.
05 - If desired, sprinkle shredded mozzarella or cheddar cheese over the tops of the peppers during the last 5 minutes of baking, allowing it to melt before serving.
