Slice brie cheese, core and thinly slice the apple, and set aside softened butter, cranberry sauce, and honey.

Lay out bread slices. Spread a layer of cranberry sauce on one side of each slice. Arrange brie slices evenly over two of the bread slices. Layer apple slices over the brie and drizzle with honey if desired. Top with remaining bread slices, cranberry side facing in.

Evenly spread softened butter on the outer sides of each sandwich.

Preheat a skillet or griddle over medium heat. Place sandwiches, buttered side down, onto the skillet. Cook for 3–5 minutes on each side, pressing gently, until the bread is golden brown and the cheese is melted.

Remove sandwiches from heat. Slice in half, garnish with fresh thyme if desired, and serve warm.
