Summer Sausage Skillet Andouille (Print Version)

# Ingredients:

→ Summer Sausage Skillet

01 - 1 tbsp extra virgin olive oil
02 - 13.5 oz Andouille Sausage, sliced into 1/2-inch thick pieces
03 - 1/3 cup diced red onion
04 - 1 red bell pepper, chopped
05 - 1 orange bell pepper, chopped
06 - 2 small to medium zucchini, sliced and quartered
07 - 1/2 tsp garlic salt
08 - 1/4 tsp sea salt
09 - 1/8 tsp fresh cracked black pepper
10 - 2 ears of corn
11 - 1/8 cup chopped basil
12 - 1/8 cup chopped cilantro
13 - Optional: Poblano or Jalapeno pepper for added heat

→ Basil Cilantro Crema

14 - 1/2 cup mayonnaise
15 - 1/4 cup sour cream
16 - 1/3 cup basil leaves, packed
17 - 1/4 cup cilantro leaves, packed
18 - 1 tbsp extra virgin olive oil
19 - 1/2 tsp garlic salt
20 - 1/4 tsp white pepper
21 - Juice from half a lime (1/2 to 1 tbsp)

# Instructions:

01 - Blend mayonnaise, sour cream, basil, cilantro, olive oil, garlic salt, white pepper, and lime juice in a food processor. Set aside and refrigerate if not using immediately.
02 - Heat olive oil in a skillet over medium-high heat until shimmering. Add sliced sausage and cook for 3 minutes per side. Remove from skillet and set aside.
03 - Preheat grill or skillet. Cook ears of corn for 4 minutes per side over medium heat. If using an outdoor grill, cook directly over open flame with the lid closed.
04 - In the same skillet, without cleaning it, add red onion and cook for 3-5 minutes until softened. Add red and orange peppers and cook for an additional 3-5 minutes, maintaining medium-high heat for a slight char.
05 - Add zucchini to the skillet along with garlic salt, sea salt, and black pepper. Cook for 3-5 minutes, ensuring contact with the pan to allow charring. Stir occasionally to avoid overcooking.
06 - Cut grilled corn off the cob. Add corn and cooked sausage back to the skillet. Sauté for 2 minutes, then turn off heat and set skillet aside to cool for 3 minutes.
07 - Stir in chopped cilantro and basil. Serve alone with Basil Cilantro Crema or over rice with additional sea salt and cracked pepper as desired.

# Notes:

01 - For a spicier dish, consider adding a diced Poblano or Jalapeno pepper.
