Strawberry Pop Tart Cookies (Recipe for Printing)

# What You Need:

06 - 1 cup powdered sugar
07 - 2 large eggs
08 - 1 teaspoon vanilla extract

10 - 1/2 cup powdered sugar, for icing (optional)
11 - 2 tablespoons milk, for icing (optional)
12 - Sprinkles, for garnish (optional)

# How to Make It:

01 - Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
02 - In a medium bowl, whisk together flour, baking soda, and salt until thoroughly blended.
03 - In a large bowl, beat softened butter, granulated sugar, and powdered sugar on medium speed until light and fluffy, about 3 to 4 minutes.
04 - Add eggs one at a time, mixing well after each addition. Blend in vanilla extract.
05 - Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
06 - Scoop 1 tablespoon portions of dough and roll into balls. Flatten into 2-inch discs and form a small well in the center of half the discs.
07 - Place about 1 teaspoon of strawberry jam into the well of each prepared disc.
08 - Top jam-filled discs with plain dough discs. Seal and crimp the edges closed using a fork.
09 - Bake for 10 to 12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
10 - If desired, whisk powdered sugar with milk to form an icing. Drizzle over cooled cookies and garnish with sprinkles.
