Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda, and salt until thoroughly blended.

In a large bowl, beat softened butter, granulated sugar, and powdered sugar on medium speed until light and fluffy, about 3 to 4 minutes.

Add eggs one at a time, mixing well after each addition. Blend in vanilla extract.

Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

Scoop 1 tablespoon portions of dough and roll into balls. Flatten into 2-inch discs and form a small well in the center of half the discs.

Place about 1 teaspoon of strawberry jam into the well of each prepared disc.

Top jam-filled discs with plain dough discs. Seal and crimp the edges closed using a fork.

Bake for 10 to 12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

If desired, whisk powdered sugar with milk to form an icing. Drizzle over cooled cookies and garnish with sprinkles.
