# What You Need:

→ Pastry

01 - 1 sheet store-bought puff pastry, thawed

→ Filling

02 - 4 ounces cream cheese, softened to room temperature
03 - 2 tablespoons granulated sugar
04 - 1/2 teaspoon vanilla extract
05 - 1/2 cup diced fresh strawberries
06 - Red food coloring, a drop or two, optional

→ Egg Wash

07 - 1 large egg
08 - 1 tablespoon cold water

# How to Make It:

01 - In a medium bowl, blend cream cheese, granulated sugar, and vanilla extract until completely smooth. Stir in a drop of red food coloring if desired for a pink hue.
02 - Fold diced strawberries into the cream cheese mixture gently to avoid breaking the fruit apart.
03 - Unfold the puff pastry sheet on a lightly floured surface. Cut into 4 equal rectangles. Shape each piece into a heart by pinching and molding as needed. Place hearts onto a parchment-lined baking sheet.
04 - Spoon the strawberry cream cheese filling into the center of each pastry heart, spreading gently and leaving a border around the edge.
05 - In a small bowl, beat the egg with cold water. Brush the edges of each pastry heart with the egg wash for a golden finish.
06 - Preheat oven to 400°F (204°C). Bake on the center rack for 22 to 25 minutes until golden and puffed.
07 - Allow pastries to cool on the sheet for several minutes before serving warm or at room temperature.
