Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper.

In a mixing bowl, combine cream cheese, white sugar, and vanilla extract. Beat until smooth and creamy.

Divide the cream cheese mixture. To one portion, stir in a few drops of red food coloring and half of the diced strawberries. Fold gently to combine.

Unfold the thawed puff pastry on a lightly floured surface. Cut into even rectangles or desired heart shapes using a sharp knife or cutter.

Arrange pastry shapes on prepared baking sheet. Spoon plain cream cheese mixture in the center of each, then top with pink strawberry mixture. Use remaining diced strawberries to garnish, if desired.

In a small bowl, whisk egg with cold water. Brush exposed pastry edges with egg wash for a golden finish.

Bake in preheated oven for 30 to 45 minutes until pastry is puffed and golden brown. Filling should be set and pastry crisp.
