Preheat oven to 350°F (175°C). Line a baking sheet with a silicone mat or parchment paper and set aside.

In a large bowl, combine strawberry cake mix, vegetable oil or melted butter, and eggs. Mix until thoroughly incorporated. Refrigerate dough for 15–20 minutes if possible to make scooping easier.

Scoop dough equal in size, using a medium scoop or spoon, and place onto the prepared baking sheet. Bake for 9–11 minutes until set but not browned. Cool on the pan briefly, then transfer cookies to a wire rack.

If desired, dip half of each cooled cookie into melted chocolate. Set cookies on wax paper and add sprinkles before chocolate sets.
