Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large mixing bowl, combine strawberry cake mix, melted unsalted butter and eggs. Mix until a uniform dough forms.

Scoop tablespoon-sized portions of dough and roll into balls. Arrange evenly on prepared baking sheets, spacing each about 2 inches apart.

Bake in preheated oven for 10-12 minutes, or until set and lightly golden at the edges. Remove and allow cookies to cool completely on a wire rack.

In a large bowl, cream softened butter and powdered sugar together using an electric mixer until light and fluffy. Blend in strawberry jam and vanilla extract until smooth. Add pink food coloring if a more vibrant hue is desired.

Once cookies have cooled, spread or pipe filling onto the flat side of half of the cookies. Top each with a remaining plain cookie to create sandwiches.
