In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess fat.

Add diced onion to the skillet with the beef and cook until softened, about 3 to 4 minutes. Stir in minced garlic and continue cooking for 1 minute until aromatic.

Stir in the taco seasoning mix and cook for 1 minute. Add the diced tomatoes with green chilies and their juice, then combine well. Remove from heat.

Layer half of the tortilla strips on the bottom of a slow cooker. Spread half of the cooked beef mixture on top, then scatter half of the black beans and corn. Drizzle with half of the salsa and sprinkle with half of the cheese. Repeat with remaining tortilla strips, beef mixture, beans, corn, salsa, and cheese.

Cover and cook on low for 3 to 4 hours, or on high for 1 to 2 hours, until heated throughout and cheese is fully melted.

Allow to rest for 10 minutes before serving. Slice and serve warm.
