Shrimp Grits Down Home (Print Version)

# Ingredients:

01 - 2 cups reduced-sodium chicken broth
02 - 2 cups 2% milk
03 - 1/3 cup butter, cubed
04 - 3/4 teaspoon salt
05 - 1/2 teaspoon pepper
06 - 3/4 cup uncooked old-fashioned grits
07 - 1 cup shredded cheddar cheese

→ Shrimp

08 - 8 thick-sliced bacon strips, chopped
09 - 1 pound uncooked shrimp (31-40 per pound), peeled and deveined
10 - 3 garlic cloves, minced
11 - 1 teaspoon Cajun or blackened seasoning
12 - 4 green onions, chopped

# Instructions:

01 - In a large saucepan, bring chicken broth, milk, butter, salt, and pepper to a boil. Slowly stir in grits. Reduce heat, cover, and cook for 15-20 minutes or until thickened, stirring occasionally. Stir in cheddar cheese until melted. Set aside and keep warm.
02 - In a large skillet, cook chopped bacon over medium heat until crisp. Remove to paper towels with a slotted spoon to drain, reserving 4 teaspoons of bacon drippings.
03 - Saute shrimp, minced garlic, and Cajun or blackened seasoning in reserved drippings over medium heat until shrimp turn pink. Stir in cooked bacon and heat through.
04 - Serve shrimp mixture over grits, and sprinkle with chopped green onions as garnish.
