Set oven to 400°F and line a baking sheet with foil or parchment paper.

In a medium skillet over medium heat, brown ground beef together with chopped onion. Season with salt and black pepper.

Drain excess fat from beef. Stir in taco seasoning and salsa. Mix well and adjust seasoning as desired.

Brush both sides of each tortilla lightly with olive oil and arrange on the prepared baking sheet.

Place 1/4 cup seasoned beef filling and 1 tablespoon shredded cheddar cheese on each tortilla. Fold tortillas in half to encase filling.

Bake folded tacos for 10 minutes. Flip with a spatula and continue baking for 5 to 10 minutes until tortillas are crisp and golden. Optionally, add a small amount of additional cheddar cheese on top after flipping.
