Preheat oven to 400°F (204°C). Coat a standard 12-cup muffin tin with cooking spray to ensure easy release.

Unroll refrigerated pizza crust and cut into 12 even squares. Press each square snugly into the muffin cups, forming a base and sides for each cupcake.

Spoon 1 tablespoon of pizza sauce onto the bottom of each dough cup. Add a layer of chopped red onion, then a portion of halved cherry tomatoes.

Sprinkle shredded mozzarella cheese generously over each cup, then top with quartered pepperoni slices. Finish with a little more cheese if desired.

Lightly dust each cupcake with Italian seasoning, red pepper flakes, and garlic salt.

Place the muffin tin in the oven and bake for 20–25 minutes, or until the crust is golden brown and cheese has melted.

Remove the pizza cupcakes from the oven and let cool in the tin for 5 minutes. Use a spatula to lift each cupcake from the tin before serving warm.
