01 - 1 pound Italian sausage, mild or spicy, sliced

07 - 4 cups kale, stems removed, roughly chopped
08 - 1 cup heavy cream or half and half
09 - 0.5 teaspoon red pepper flakes
10 - 0.5 teaspoon dried thyme or Italian seasoning
11 - Salt and freshly ground black pepper, to taste

# How to Make It:

01 - Place a large heavy-bottomed pot over medium heat. Add sliced sausage and cook for 2 to 3 minutes until browned and some fat is rendered. Add olive oil, onion, and garlic. Sauté for 5 minutes or until onion is translucent and garlic is fragrant.
02 - Stir in red pepper flakes and dried thyme or Italian seasoning. Add diced potatoes and chicken broth, ensuring ingredients are submerged. Bring to a boil, then cover and simmer for 15 to 20 minutes until potatoes are fork-tender.
03 - Add chopped kale and heavy cream to the pot. Reduce heat and simmer for 2 to 3 minutes until kale is wilted and soup is creamy. Taste and adjust seasonings with salt and freshly ground black pepper. Lightly mash several potatoes against the side of the pot for a thicker texture if desired.
