Wash, peel, and cut the carrots into 1-inch pieces. Rinse thoroughly and pat dry with paper towels to ensure even roasting.

In a medium bowl, whisk together olive oil, honey, soy sauce or tamari, rice vinegar, minced garlic, ground ginger, smoked paprika, and red pepper flakes if using. Whisk until emulsified and smooth. Taste and adjust seasoning with salt, pepper, or additional honey as desired.

Add the carrot pieces to the bowl with the glaze. Toss until all carrots are evenly coated.

Preheat oven to 400°F (204°C). Arrange glazed carrots in a single layer on a large baking sheet. Roast for 25 to 30 minutes, tossing once halfway, until the carrots are tender and deeply caramelized at the edges.

Remove the carrots from the oven. Transfer to a serving platter and sprinkle with chopped parsley. Season with additional salt and black pepper if needed. Serve immediately.
