# How to Make It:

01 - Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a bowl, toss walnut halves and pumpkin seeds with honey or maple syrup, chipotle powder, and a generous pinch of kosher salt. Spread mixture evenly on prepared baking sheet. Bake for 15 to 20 minutes, stirring once, until nuts are golden and fragrant. Allow to cool completely.
02 - In a large salad bowl, combine mixed greens, curly endive, chopped apples or pears, and sliced avocados. Gently mix to distribute ingredients evenly.
03 - Scatter pomegranate seeds and crumbled cheese over salad mixture.
04 - In a small bowl or jar, whisk together olive oil, vinegar, dijon mustard, honey, fig preserves, orange zest, orange juice, and a pinch of black pepper until fully emulsified.
05 - Drizzle desired amount of dressing over the salad. Add cooled candied nuts and pumpkin seeds just before serving. Toss gently to coat. Serve immediately.

# Extra Tips:

01 - Substitute pears for apples for a softer texture and milder sweetness.
02 - Prepare candied nuts up to two days in advance; store in an airtight container.
