Traditional Polish Strawberry Knedle (Recipe for Printing)

Soft dumplings with fresh strawberries and a buttery finish, perfect for dessert or a sweet treat.

# What You Need:

→ Dough

01 - 1 pound cooked and mashed potatoes, cooled
02 - 1 large egg
03 - 1 to 1 1/4 cups all-purpose flour
04 - 1 pinch salt

→ Filling

05 - 15 to 20 small fresh strawberries, hulled
06 - 2 to 3 tablespoons granulated sugar, plus extra for topping

→ Finishing

07 - 2 to 3 tablespoons melted butter
08 - Toasted breadcrumbs in butter, optional
09 - Sour cream, optional, for serving

# How to Make It:

01 - Combine cooled mashed potatoes, egg, and 1 cup of flour in a large bowl. Gently knead until a soft, smooth dough forms, adding additional flour as needed to reduce stickiness.
02 - Wash and hull strawberries. Cut larger berries in half. Sprinkle lightly with granulated sugar.
03 - Portion off pieces of dough and flatten each into a circle. Place one strawberry in the center, add a pinch of sugar, then fold the dough around the fruit and seal well. Shape into a ball and repeat with the remaining ingredients.
04 - Bring a large pot of salted water to a gentle boil. Add dumplings carefully in batches. Once they float to the surface, continue cooking for 1 to 2 additional minutes. Remove with a slotted spoon.
05 - Transfer dumplings to a plate. Drizzle with melted butter, sprinkle with additional sugar, and, if desired, toss in toasted breadcrumbs or serve with sour cream. Enjoy while warm.

# Extra Tips:

01 - Ensure the dough is not overworked to keep the dumplings light and tender.
