Combine cooled mashed potatoes, egg, and 1 cup of flour in a large bowl. Gently knead until a soft, smooth dough forms, adding additional flour as needed to reduce stickiness.

Wash and hull strawberries. Cut larger berries in half. Sprinkle lightly with granulated sugar.

Portion off pieces of dough and flatten each into a circle. Place one strawberry in the center, add a pinch of sugar, then fold the dough around the fruit and seal well. Shape into a ball and repeat with the remaining ingredients.

Bring a large pot of salted water to a gentle boil. Add dumplings carefully in batches. Once they float to the surface, continue cooking for 1 to 2 additional minutes. Remove with a slotted spoon.

Transfer dumplings to a plate. Drizzle with melted butter, sprinkle with additional sugar, and, if desired, toss in toasted breadcrumbs or serve with sour cream. Enjoy while warm.
