02 - 1/4 cup finely grated cheese (optional)
03 - 1/4 cup finely chopped onion
04 - 1 clove garlic, minced
05 - 1/4 teaspoon paprika
06 - 1/4 cup fresh herbs, finely chopped (optional)
07 - Salt and freshly ground black pepper, to taste

→ Breading

08 - 1/2 cup dry breadcrumbs
09 - 1/4 cup all-purpose flour
10 - 2 large eggs, beaten

→ For Frying

11 - 2 tablespoons unsalted butter or olive oil
12 - Oil or additional butter for frying

# How to Make It:

01 - Heat butter or olive oil in a skillet over medium heat. Sauté onion and garlic until softened and fragrant, approximately 3 minutes. Remove from heat and allow to cool slightly.
02 - In a large mixing bowl, combine chopped hard-boiled eggs, sautéed onion and garlic, grated cheese (if using), paprika, chopped fresh herbs (if using), salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
03 - Divide the egg mixture evenly and shape into compact patties, pressing each gently for uniform thickness.
04 - Dredge each patty in flour, ensuring full coverage. Dip into beaten eggs, then coat completely with breadcrumbs.
05 - Heat a generous amount of oil or butter in a large skillet over medium heat. Fry the cutlets in batches for 2–3 minutes per side or until golden brown and crisp. Transfer to a plate lined with paper towels to drain excess fat.

# Extra Tips:

01 - For best flavor, use a mix of herbs such as parsley, chives, or dill. Chilling the patties briefly before frying helps them retain their shape.
