# Ingredients:

→ Cilantro Lime Cauliflower Rice

01 - 2 tbsp coconut oil
02 - 2 garlic cloves, minced
03 - 4 cups cauliflower rice
04 - Zest from 1 lime
05 - 1/2 cup fresh cilantro leaves
06 - Salt and pepper to taste

→ Meat

07 - 1 tsp chili powder
08 - 1 tsp cumin
09 - 1/2 tsp dried oregano
10 - 1/2 tsp garlic powder
11 - 1/2 tsp onion powder
12 - 1/2 tsp paprika
13 - 1/2 tsp coriander
14 - 1/2 tsp sea salt
15 - 1/4 tsp ground black pepper
16 - 1 lb chicken thighs or breasts, or ground beef, cut into bite-sized pieces
17 - 2 tbsp coconut oil
18 - 1 large onion, sliced

→ Optional Add-ins

19 - Shredded romaine lettuce
20 - Salsa of your choice
21 - 1 batch guacamole or sliced avocados
22 - Sliced black olives
23 - Chopped raw onions
24 - Plantain chips
25 - Lime juice
26 - Chopped cilantro for garnish

# Instructions:

01 - Heat coconut oil in a skillet over medium-high heat. Add minced garlic and cook for 1 minute until fragrant. Stir in cauliflower rice and cook for 5 minutes until soft and cooked through. Add lime zest, cilantro, salt, and pepper, mixing well. Remove from heat and set aside.
02 - Season the meat with chili powder, cumin, oregano, garlic powder, onion powder, paprika, coriander, salt, and black pepper, ensuring even coating. Heat coconut oil in a skillet over medium-high heat. Sauté sliced onions for 2-3 minutes until translucent, then add seasoned meat. Cook for 8-10 minutes until browned and fully cooked through.
03 - Begin layering the bowl with shredded romaine lettuce and prepared cauliflower rice. Add cooked meat and top with your choice of add-ins such as salsa, guacamole, plantain chips, or black olives. Finish with a drizzle of lime juice and a sprinkle of freshly chopped cilantro before serving.
