Set oven to 350°F and line baking sheet with parchment paper.
02 -
Cream together softened butter, brown sugar, and granulated sugar on medium speed until light and fluffy. Beat in eggs and vanilla extract until fully incorporated. In a separate bowl, whisk together flour, baking soda, and salt. Gradually blend the dry ingredients into the creamed mixture to form a cohesive dough.
03 -
In a small bowl, mix together chopped pecans, maple syrup, brown sugar, melted butter, and vanilla extract until combined.
04 -
Portion approximately 2 tablespoons of dough and flatten in your hand. Place 1 teaspoon of the maple pecan filling in the center, then carefully wrap the dough around the filling and seal. Roll each portion into a ball and place on the prepared baking sheet.
05 -
Arrange cookie dough balls 2 inches apart and bake for 12 to 15 minutes or until golden at the edges but still soft in the center.
06 -
Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
