Combine 3/4 cup diced strawberries with 1 tablespoon sugar in a bowl. Stir thoroughly and set aside to macerate until juices release.

Add 2 cups diced strawberries to a saucepan with 3 tablespoons sugar and a generous squeeze of lemon or lime juice. Bring to a boil over medium heat, then reduce heat and simmer for 10 minutes, stirring often, until the mixture breaks down and becomes syrup-like.

Transfer the strawberry syrup to the refrigerator and cool completely until cold.

For each serving, add 2 to 3 tablespoons strawberry syrup to a glass. Pour in 3/4 cup non-dairy milk, add ice if desired, and top with 1 tablespoon macerated strawberries. Stir to blend. Adjust syrup and strawberry quantities to taste.
