# What You Need:

→ For the Chicken

01 - 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
02 - 2 tablespoons gochujang (Korean chili paste)
03 - 1 tablespoon gochugaru (Korean chili flakes), adjust to taste
04 - 2 tablespoons soy sauce
05 - 1 tablespoon honey
06 - 1 tablespoon toasted sesame oil
07 - 3 cloves garlic, minced
08 - 1 teaspoon fresh ginger, grated
09 - 1 tablespoon rice vinegar

→ For the Slaw

10 - 1 cup shredded green cabbage
11 - 2 tablespoons mayonnaise
12 - 1 tablespoon sriracha
13 - 1 teaspoon honey
14 - 1 tablespoon rice vinegar

→ Assembly

15 - 4 medium brioche buns, split and toasted
16 - 1 teaspoon toasted sesame seeds
17 - 1 stalk green onion, thinly sliced

# How to Make It:

01 - In a large mixing bowl, whisk together the gochujang, gochugaru, soy sauce, honey, sesame oil, minced garlic, grated ginger, and rice vinegar until well combined.
02 - Add the chicken thigh pieces to the marinade. Toss thoroughly to coat. Cover and refrigerate for at least 30 minutes or marinate overnight for deeper flavor.
03 - Preheat a grill pan or skillet over medium-high heat. Working in batches, grill the marinated chicken for 4 to 5 minutes per side until charred at the edges and cooked through, with an internal temperature of 165°F.
04 - While the chicken cooks, combine shredded cabbage, mayonnaise, sriracha, honey, and rice vinegar in a separate bowl. Toss until the slaw is evenly coated.
05 - Lightly butter the brioche buns if desired, then toast them in a dry skillet or under the broiler until golden brown.
06 - Layer slaw onto the bottom half of each toasted brioche bun. Arrange spicy grilled chicken pieces over the slaw. Sprinkle with sesame seeds and sliced green onions. Finish with the top bun and serve at once.
