Place chicken breasts between sheets of plastic wrap and pound to an even 1/2 inch thickness using a meat mallet.

In a medium mixing bowl, combine ricotta cheese, grated parmesan, chopped spinach, basil, parsley, garlic powder, salt, and black pepper. Mix until smooth.

Spoon an even layer of the ricotta filling over each chicken breast. Gently roll up each breast, enclosing the filling, then secure with toothpicks or kitchen twine.

Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken rolls and sear until golden on all sides, about 4 minutes per side.

Pour marinara sauce over and around the chicken rolls. Sprinkle with crushed red pepper flakes if desired. Transfer the skillet to a preheated oven at 375°F and bake for 20 minutes, or until chicken is cooked through.

Remove toothpicks or twine before serving. Spoon marinara sauce over chicken rolls and garnish with extra herbs if desired.
