# What You Need:

01 - 4 boneless, skinless chicken breasts, pounded evenly to 1/2 inch thickness

02 - 1 cup ricotta cheese, whole milk or part-skim
03 - 1/3 cup grated parmesan cheese
04 - 2 cups fresh spinach, chopped
05 - 1/4 cup finely chopped fresh basil
06 - 1/4 cup finely chopped fresh parsley
07 - 1 teaspoon garlic powder
08 - Salt, to taste
09 - Black pepper, to taste

# How to Make It:

01 - Place chicken breasts between sheets of plastic wrap and pound to an even 1/2 inch thickness using a meat mallet.
02 - In a medium mixing bowl, combine ricotta cheese, grated parmesan, chopped spinach, basil, parsley, garlic powder, salt, and black pepper. Mix until smooth.
03 - Spoon an even layer of the ricotta filling over each chicken breast. Gently roll up each breast, enclosing the filling, then secure with toothpicks or kitchen twine.
04 - Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken rolls and sear until golden on all sides, about 4 minutes per side.
05 - Pour marinara sauce over and around the chicken rolls. Sprinkle with crushed red pepper flakes if desired. Transfer the skillet to a preheated oven at 375°F and bake for 20 minutes, or until chicken is cooked through.
