Preheat oven to 350°F. Line a small baking sheet with parchment paper or place a silicone baking mat on top.

Melt unsalted butter in a mixing bowl using a microwave. Add granulated sugar, egg yolks, vanilla extract, and 3 drops green food gel coloring. Stir the mixture thoroughly. Increase food coloring for a deeper green if desired.

Sprinkle all-purpose flour, baking soda, and fine salt evenly over the mixture. Stir gently until just combined to form the dough.

Flatten dough evenly in the bowl, then divide in half by eye. Form each half into 6 balls for a total of 12 cookies.

Roll each dough ball between your palms, then lightly dredge in extra granulated sugar. Place balls spaced apart on prepared baking sheet.

Bake in preheated oven for 10 to 11 minutes, until cookies spread, crackle, and the tops appear dry.

Remove cookies from oven. Immediately press a red heart sprinkle onto the surface of each cookie while still warm so the decoration adheres.

Allow cookies to rest on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
