Grilled Cajun Shrimp Skewers (Print Version)

# Ingredients:

01 - 1 1/2 lb jumbo shrimp, peeled and deveined, with tail on
02 - 12 oz andouille sausage
03 - 2 tbsp avocado oil or olive oil
04 - 2 tsp smoked paprika
05 - 1 tsp garlic powder
06 - 1/2 tsp cayenne pepper
07 - 1/2 tsp onion powder
08 - 1/2 tsp sea salt
09 - 1/4 tsp ground black pepper
10 - 1/4 tsp dried oregano
11 - 1/4 tsp dried thyme
12 - Chopped parsley for garnish

# Instructions:

01 - If using wooden skewers, soak them in water for at least 30 minutes before cooking.
02 - Preheat the grill to medium-high heat and oil the grates to prevent sticking.
03 - Pat dry the shrimp. Count the number of shrimp you have, and slice the sausage into an equal number of pieces.
04 - Add shrimp and sausage to a large bowl and toss with avocado oil.
05 - In a separate bowl, whisk together smoked paprika, garlic powder, cayenne pepper, onion powder, sea salt, ground black pepper, dried oregano, and thyme.
06 - Sprinkle the shrimp and sausage with the cajun spice blend and toss to coat evenly.
07 - Thread shrimp and sausage onto skewers, tucking the sausage slices in the inner curve of the shrimp.
08 - Grill for 2-3 minutes per side, until the shrimp are opaque and cooked through.
09 - Sprinkle with parsley flakes before serving.
