Cook diced onions in a skillet over medium heat until softened, about 5 minutes.

In a large bowl, mix ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the Parmesan cheese until evenly combined.

Form the mixture into a loaf shape in the prepared baking dish.

Sprinkle the remaining Parmesan cheese evenly over the top. Optionally, add paprika or Italian seasoning to enhance flavor.

Bake for 45 to 50 minutes, or until the internal temperature reaches 165°F. Allow to rest for 10 minutes before slicing.
