Preheat oven to 350°F and line a baking sheet with parchment paper.

In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.

Mix in the pure vanilla extract until fully blended.

Gradually add all-purpose flour to the butter mixture, mixing on low speed or folding with a spatula until just combined. Dough should be soft but not sticky.

Shape dough into a log approximately 2 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 1 hour until firm.

Once chilled, cut dough into 1/4-inch thick rounds. Place rounds with spacing on the prepared baking sheet.

Lightly sprinkle each cookie round with additional flaky sea salt.

Bake for 12 to 15 minutes, until edges are turning golden and centers remain pale.

Remove baking sheet from oven and cool cookies on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
