04 - 2 cloves garlic, minced
05 - 1 teaspoon dried thyme

06 - 3 tablespoons all-purpose flour
07 - 2 cups vegetable broth
08 - 2 cups whole milk
09 - 1/2 cup heavy cream

→ Cheeses

10 - 2 cups shredded Gruyère cheese
11 - 1 cup shredded sharp cheddar cheese
12 - 1 cup shredded mozzarella cheese

→ Seasonings

13 - 1 teaspoon salt
14 - 1/2 teaspoon freshly ground black pepper

→ Pasta & Toppings

15 - 12 ounces dried pasta, such as cavatappi or elbow macaroni, cooked al dente
16 - 1 cup breadcrumbs
17 - 1/2 cup grated Parmesan cheese
18 - Fresh thyme, for garnish

# How to Make It:

01 - Preheat the oven to 375°F (190°C) and lightly butter a medium baking dish.
02 - Heat olive oil with 1 tablespoon of butter in a large skillet over medium heat. Add the sliced onions and cook, stirring regularly, until deeply caramelized, about 25 to 30 minutes. Stir in minced garlic and dried thyme during the final 2 minutes of cooking.
03 - Add the remaining 2 tablespoons butter to the pan. Sprinkle in flour and stir to form a roux, cooking 1 to 2 minutes. Slowly whisk in vegetable broth, followed by milk and heavy cream, until smooth and slightly thickened.
04 - Reduce heat to low. Stir in shredded Gruyère, cheddar, and mozzarella. Season with salt and black pepper, blending until cheeses are evenly incorporated.
05 - Gently toss the cooked pasta with the cheese sauce and caramelized onions until evenly coated.
06 - Transfer mixture to the prepared baking dish. In a separate bowl, combine breadcrumbs with grated Parmesan cheese. Sprinkle evenly over the pasta.
07 - Bake for 20 to 25 minutes, or until the surface is golden brown and the filling is bubbling along the edges.
08 - Let the dish rest for 5 minutes after baking. Garnish with fresh thyme before serving hot.

# Extra Tips:

01 - Ensure the onions are well caramelized for optimal depth of flavor. Letting the dish rest before serving helps the sauce fully set.
