# How to Make It:

01 - In a large oven-safe skillet or Dutch oven, melt butter and olive oil over medium heat. Add sliced onions, sugar, and salt. Cook for 20 to 25 minutes, stirring occasionally, until onions are deeply golden and caramelized. Stir in minced garlic during the last 1 to 2 minutes.
02 - Stir in the orzo pasta and cook for 2 minutes, allowing it to lightly toast. Add shredded chicken, dried thyme, and black pepper. Mix thoroughly to combine.
03 - Add chicken broth and heavy cream. Bring to a gentle simmer, then reduce heat to low. Cover and cook for 8 to 10 minutes, stirring occasionally, until orzo is tender and has absorbed most of the liquid.
04 - Stir in 1 cup of the shredded mozzarella and all the grated Parmesan cheese. Mix until cheeses have fully melted and the mixture is creamy.
