# How to Make It:

01 - Pat beef dry with paper towels. In a small bowl, combine sea salt, black pepper, garlic powder, onion powder, and dried thyme. Rub seasoning blend over the beef to ensure even coverage.
02 - Heat olive oil in a large skillet over medium-high heat. Sear beef on all sides for 2–3 minutes per side until a deep brown crust forms. Remove from heat and transfer to slow cooker.
03 - Add 4 cups beef broth, Worcestershire sauce, soy sauce, bay leaves, minced onion, and minced garlic to the slow cooker with the seared beef. Cover and cook on low for 4–6 hours, or until the beef is heated through and fully infused with flavors.
04 - Remove beef from slow cooker and rest under foil for 15–20 minutes. Slice thinly against the grain, then return slices to 1–2 cups of warm cooking liquid to keep moist.
05 - Strain remaining beef cooking liquid into a saucepan. Skim surface fat. Simmer au jus over low heat and add balsamic vinegar or red wine. If a thicker consistency is desired, whisk in a cornstarch slurry and simmer until slightly thickened. Adjust seasoning with salt and pepper to taste. Keep warm.
06 - In a skillet over medium heat, cook sliced yellow onion with a small amount of olive oil until deeply caramelized and golden, about 20–25 minutes. Stir occasionally for even browning.
07 - Warm tortillas in a dry skillet or microwave until pliable. Spread softened cream cheese evenly over each tortilla. Optional: Add a thin layer of Dijon mustard for tang.
08 - Top cream cheese with slices of roast beef, caramelized onions, shredded mozzarella or provolone, and one slice of provolone cheese per tortilla. Sprinkle with fresh herbs if desired. Roll tortillas tightly, placing seam-side down.
09 - Combine melted butter with garlic powder, onion powder, and dried parsley. Brush mixture over rolled tortillas for flavor and color.
10 - Preheat oven to 375°F. Arrange rolled tortillas seam-side down on a greased or parchment-lined baking sheet. Bake for 10–15 minutes until golden and cheese is melted.
11 - Cool baked rolls slightly, then slice into 1-inch pinwheels. Arrange on a platter and serve immediately with warm au jus for dipping and creamy horseradish sauce on the side.

# Extra Tips:

01 - For best results, use freshly sliced roast beef and allow cream cheese to fully soften before spreading. Warming tortillas ensures clean, crack-free rolling. Thin slicing against the grain yields exceptionally tender beef.
02 - Customize roll ups by incorporating different cheeses such as Gruyère or sharp white cheddar, or add sautéed bell peppers for extra depth. For a vegetarian adaptation, substitute roast beef with roasted portobello mushrooms and caramelized onions.
03 - For crispier pinwheels, brush tortillas with melted butter before baking. Garnish with fresh herbs for a vibrant, aromatic finish.
