In a large bowl, beat the softened butter and granulated sugar together using an electric mixer until pale and fluffy.

Add the egg and vanilla extract to the butter-sugar mixture and beat well until fully incorporated.

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.

Divide dough evenly among prepared muffin cups. Press dough on bottom and up sides to create a well for filling.

Bake for 18-20 minutes or until the edges are golden. Set aside to cool completely before removing from tin.

Once cooled, spoon a layer of strawberry jam into each cookie cup. Pipe pink buttercream frosting on top and garnish with heart and round sprinkles.
