Easy Spicy Zucchini Soup (Print Version)

# Ingredients:

01 - 4 medium zucchinis, chopped
02 - 1 small onion, chopped
03 - 2 cloves garlic, minced
04 - 3 cups vegetable broth or chicken broth
05 - 1/2 teaspoon red pepper flakes, adjusted to taste
06 - 1 teaspoon ground cumin, optional
07 - 1/2 teaspoon salt, adjusted to taste
08 - 1/4 teaspoon black pepper
09 - 1/2 cup heavy cream, coconut milk, or plain yogurt, optional
10 - 1 tablespoon olive oil
11 - Fresh herbs such as parsley or cilantro, for garnish
12 - A squeeze of lemon, optional

# Instructions:

01 - Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft, approximately 3 minutes. Add garlic and cook for 1 minute.
02 - Add the chopped zucchini, red pepper flakes, ground cumin, salt, and black pepper to the pot. Stir and cook for 4–5 minutes until slightly softened.
03 - Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 15–20 minutes until the zucchini is tender.
04 - Remove the pot from heat. Use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches. Stir in heavy cream, coconut milk, or yogurt if using.
05 - Taste the soup and adjust the salt or spices to your preference. Add a squeeze of lemon for brightness if desired. Serve hot, garnished with fresh herbs.
