Easy Peach Salsa Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1/2 teaspoon salt
03 - 1/2 teaspoon black pepper
04 - 1/2 teaspoon smoked paprika
05 - 1 tablespoon olive oil

→ Peach Salsa

06 - 1 cup fresh peaches, peeled and diced (or canned, drained)
07 - 1/4 cup red bell pepper, diced
08 - 1/4 cup red onion, diced
09 - 1 small jalapeño, seeded and minced
10 - 2 tablespoons fresh cilantro, chopped
11 - 1 tablespoon lime juice
12 - 1 teaspoon honey
13 - pinch of salt

# Instructions:

01 - In a bowl, combine peaches, red bell pepper, red onion, jalapeño, cilantro, lime juice, honey, and a pinch of salt. Stir to mix evenly and set aside.
02 - Season the chicken breasts evenly with salt, black pepper, and smoked paprika. Heat olive oil in a large skillet over medium heat. Sear the chicken for 4–5 minutes on each side, until golden brown and cooked through.
03 - Place the cooked chicken breasts on a serving platter or individual plates. Spoon the fresh peach salsa over the chicken.
04 - Serve immediately with rice, quinoa, or a fresh green salad. Optionally garnish with extra cilantro and lime wedges.

# Notes:

01 - For a spicier salsa, leave the seeds in the jalapeño.
