Preheat the oven to 375°F and line a baking sheet with parchment paper.

Roll out dough on a lightly floured surface and cut into four-inch squares or circles.

Spread a small spoonful of marinara sauce on each dough piece, leaving edges clean.

Layer mozzarella, Parmesan, and any desired fillings onto each dough piece. Sprinkle with Italian seasoning and red pepper flakes.

Fold dough over fillings to enclose and press edges with a fork to seal.

Brush tops of pockets with beaten egg and, if desired, sprinkle with additional Italian seasoning or garlic powder.
