# How to Make It:

01 - Combine lemon juice and olive oil in a mixing bowl. Whisk in oregano, garlic powder, smoked paprika, cumin, salt, and pepper until spices are thoroughly incorporated. Add chicken and turn to coat evenly. Cover and let stand at room temperature for 30 minutes.
02 - Rinse rice until water runs nearly clear. Drain thoroughly using a fine-mesh strainer. Spread rice evenly across the base of a 9x13 inch baking dish. Sprinkle zucchini over the rice if using. Pour warmed chicken broth around the edges, and season liquid layer with a pinch of kosher salt. Ensure all rice is submerged and create shallow wells for chicken placement.
