09 - 1 medium shallot, finely diced or use red onion
10 - 6 cups mixed greens such as arugula or baby spinach
11 - 1 medium Honeycrisp or Pink Lady apple, thinly sliced
12 - 1/2 cup dried cranberries or cherries or raisins
13 - 1/4 cup roasted pumpkin seeds or sunflower seeds
14 - 1/3 cup crumbled fresh goat cheese or feta cheese

# How to Make It:

01 - In a medium bowl, whisk together the extra-virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, cinnamon if using, and freshly ground black pepper until fully emulsified.
02 - In a dry skillet over medium heat, toast walnuts for 3–4 minutes, stirring frequently until fragrant and lightly golden. Cool before adding to salad.
