Heat olive oil in a medium skillet over medium-high heat. Once the oil is hot and shimmering, add the steak pieces in a single layer. Sear for 1 1/2 to 2 minutes without disturbing them, then flip and cook for another 1 to 2 minutes or until your desired doneness is reached.

Lower the heat to medium. Add half of the cowboy butter to the skillet. Toss steak bites thoroughly to coat and cook for 1 minute, just until the butter is melted and the meat is evenly glazed.

Melt the remaining cowboy butter in the microwave and provide on the side for dipping or drizzling over the steak bites.
