Heat olive oil in a skillet over medium heat. Add finely diced onion and minced garlic. Sauté until onion is soft and translucent, about 3 to 4 minutes. Remove from heat and let cool.

In a large bowl, mix together sausage meat, sautéed onion and garlic, dried sage, dried thyme, salt, and black pepper until thoroughly combined.

On a lightly floured surface, unfurl puff pastry sheet. Evenly spread the sausage mixture along one long edge of the pastry, forming a compact log.

Brush beaten egg along the opposite edge of the pastry. Roll the pastry tightly over the sausage mixture to seal, placing the seam side down. Cut the roll into 6 to 8 equal pieces.

Arrange sausage rolls on a parchment-lined baking sheet. Brush tops with remaining beaten egg for a glossy finish. Bake in a preheated oven at 400°F (200°C) for 23 to 25 minutes, or until golden brown and cooked through.
