01 - 5 pounds boneless, skinless chicken breasts, cut into small pieces

11 - 1-2 fresh jalapeños, deseeded and chopped

15 - 2 cups shredded cheddar cheese

# How to Make It:

01 - In a bowl, combine the chicken pieces with smoked paprika, garlic powder, onion powder, salt, and black pepper. Heat olive oil in a large skillet over medium heat, add the seasoned chicken, and cook until fully cooked and browned. Toss the cooked chicken with honey, hot sauce, lime juice, and chopped jalapeños. Set aside.
02 - Place a tortilla on a flat surface, spread a layer of shredded cheddar and Monterey Jack cheese, add a portion of the chicken mixture, then top with more cheese. Cover with another tortilla if desired or fold the tortilla over.
03 - Heat a skillet over medium heat, add a small amount of butter, and cook each quesadilla until the cheese melts and the tortilla is golden brown on both sides, about 2-3 minutes per side.
04 - Slice the quesadillas into wedges, garnish with chopped cilantro, and serve with sour cream on the side.
