Beef, rice, cheese and carrots baked in a creamy mushroom casserole. Hearty and family friendly.

# What You Need:

→ Base Components

01 - 1 can (10.5 ounces) cream of mushroom soup
02 - 1 cup uncooked long grain white rice
03 - 2 cups water

→ Vegetables and Protein

04 - 1 cup carrots, thinly sliced
05 - 0.5 to 1 pound cooked ground beef

→ Topping

06 - 1 cup Cheddar or Colby Jack cheese, grated or sliced

# How to Make It:

01 - Preheat the oven to 350°F. Lightly grease an 8×9-inch baking dish with nonstick spray or a thin layer of oil.
02 - In a large bowl, combine cream of mushroom soup, uncooked long grain white rice, water, sliced carrots, and cooked ground beef. Stir mixture thoroughly to distribute ingredients evenly.
03 - Transfer the mixture into the prepared baking dish and spread evenly. Place the dish in the oven and bake for 90 minutes, uncovered.
04 - Remove the baking dish from the oven. Evenly distribute Cheddar or Colby Jack cheese over the top of the casserole, then return to the oven and bake for an additional 2-3 minutes or until the cheese is fully melted.
05 - Allow the casserole to rest for several minutes before slicing and serving.

# Extra Tips:

01 - Opt for reduced-fat cream of mushroom soup and lean ground beef to create a lighter dish. Incorporating vegetables such as peas, corn, or green beans enhances nutritional value and flavor variety. Leftovers should be refrigerated and consumed within three days.
