10 - 1/4 to 1/2 teaspoon crushed red pepper flakes

14 - 2 cups torn or roughly chopped sourdough bread

# How to Make It:

01 - Preheat oven to 425°F. Heat 2 tablespoons of olive oil in a large sauté pan over medium heat. Once oil is shimmering, add the chopped onion and cook for 7 to 8 minutes until softened.
02 - Stir in minced garlic and crushed red pepper flakes. Cook for 2 minutes until fragrant. Add chopped kale and cook an additional 2 to 3 minutes until wilted.
03 - Add heavy cream, 1/3 cup grated Parmesan, Dijon mustard, fresh thyme leaves, kosher salt, and ground black pepper. Simmer the mixture for 3 to 5 minutes, stirring often, until thickened.
04 - In a large mixing bowl, toss cubed butternut squash with the remaining 2 tablespoons olive oil. Combine seasoned squash with the creamy kale mixture. Fold in shredded Gruyere cheese.
05 - Pour the mixture into a greased baking dish. Scatter torn sourdough bread pieces and chopped walnuts evenly over top. Sprinkle remaining 2 tablespoons Parmesan cheese across casserole.
06 - Bake uncovered for 30 to 45 minutes until the squash is tender and the topping is golden brown. Allow to cool slightly before serving.
