Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly coat with cooking spray or oil.

In a skillet over medium heat, brown the ground beef with chopped onion and minced garlic until beef is no longer pink and onions are translucent. Season with salt and black pepper. Drain excess fat and let mixture cool.

Roll out refrigerated pizza dough on a lightly floured surface. Cut the dough into 16 equal squares using a knife or pizza cutter.

Place a spoonful of the beef mixture and a cheddar cheese square in the center of each dough square. Fold the dough over the filling, pinching edges tightly to seal and form a ball.

In a large pot, bring 4 cups water to a boil. Sprinkle in baking soda, lower the heat to a gentle simmer.

Submerge each dough ball in the simmering baking soda solution for 30 seconds, then remove with a slotted spoon and arrange on the prepared baking sheet.

Brush dough balls with beaten egg and sprinkle with sesame seeds if desired.

Transfer baking sheet to the oven and bake for 15-20 minutes until pretzel bombs are a deep golden brown.
